Ground Beef Recipes and Cooking Tips

Ground beef or hamburger is labeled with varying fat content, usually from about 27% fat (the maximum is 30%) to a very lean 5% fat. You can eliminate much of the excess fat in recipes calling for cooked or browned ground beef. Drain browned ground beef and transfer to a dish lined with paper towels; blot cooked meat all over with paper towels, transfer to a colander, then rinse with very hot water. For burgers, meatballs, and similar dishes, leaner ground beef should be used. To cut down on the fat in meat loaf, a rack or meat loaf pan will keep the loaf from sitting in the fat drippings.
