Ingredients:
- 1 1/2 pounds beef round steak or top round, 1-inch thick, cut in 1-inch cubes
- vegetable oil
- 1 can condensed cheddar cheese soup
- 1/4 cup chopped onion
- 3 tablespoons tomato paste
- 1/2 teaspoon lemon pepper or other seasoned pepper blend
- 1/2 cup buttermilk
- 1 package frozen Italian-style green beans, or green peas
- 2 cups fresh sliced mushrooms
- hot cooked fettuccine or egg noodles
Preparation:
In a small amount of oil in skillet or Dutch oven, brown beef cubes in batches. Place beef in a 3 1/2-quart or larger slow cooker. Combine soup, onion, tomato paste, and lemon pepper in a bowl; stir to mix. Pour over the meat. Add mushrooms; cover and cook on low for 8 to 10 hours (or on high for 4 to 5 hours). About 30 minutes before serving, add frozen vegetables and buttermilk. Cover and cook on high for about 30 minutes. Serve with hot cooked noodles.
