Cook Time: 10 minutes
Ingredients:
- 2 cups light brown sugar, packed
- 1/2 cup butter, softened
- 1/2 cup shortening
- 1 teaspoon vanilla
- 2 eggs
- 2 1/4 cups flour
- 2 cups quick cooking oats
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup confectioners' sugar, sifted
Preparation:
In a large mixing bowl, beat brown sugar, butter, shortening, vanilla, and eggs together with an electric mixer. Stir in flour, oats, baking powder, soda, and salt.
Shape dough into balls about 1-inch in diameter; roll in sifted sugar.
Place 1 1/2 inches apart on a greased baking sheet. Bake at 350 degrees
for about 10 minutes, or until very little indentation remains when
touched lightly in the center. Remove to a wire rack to cool.
Makes about
60 cookies.
