Ingredients:
- 1 can cream of mushroom soup, undiluted
- 1 cup chicken broth
- 1 cup instant rice
- 1/4 teaspoon salt, or to taste
- 2 tablespoons butter or margarine
- 2 whole frying chickens
- 2 tablespoons grated orange rind
- 1/4 cup orange juice
- 1/2 cup light corn syrup
- 1/4 teaspoon ginger
- salt, to taste
Preparation:
Combine mushroom soup, broth, rice, salt and butter or margarine in a saucepan; cover and cook according to rice directions. Fill cavities of halved fryers with rice mixture; place fryers, breast side up, in an 8 x 11-inch. Place remaining rice mixture around the chicken. Bake at 375° for 1 hour and 30 minutes, or until chicken is cooked. Combine orange peel, juice, corn syrup, ginger and salt; brush on chicken. Cook for an additional 15 minutes.Baked chicken recipe serves 6 to 8.
