Orange Baked Chicken with Rice

Flavorful chicken with rice, orange peel and juice, and ginger.

Ingredients:

  • 1 can cream of mushroom soup, undiluted
  • 1 cup chicken broth
  • 1 cup instant rice
  • 1/4 teaspoon salt, or to taste
  • 2 tablespoons butter or margarine
  • 2 whole frying chickens
  • 2 tablespoons grated orange rind
  • 1/4 cup orange juice
  • 1/2 cup light corn syrup
  • 1/4 teaspoon ginger
  • salt, to taste

Preparation:

Combine mushroom soup, broth, rice, salt and butter or margarine in a saucepan; cover and cook according to rice directions. Fill cavities of halved fryers with rice mixture; place fryers, breast side up, in an 8 x 11-inch. Place remaining rice mixture around the chicken. Bake at 375° for 1 hour and 30 minutes, or until chicken is cooked. Combine orange peel, juice, corn syrup, ginger and salt; brush on chicken. Cook for an additional 15 minutes.
Baked chicken recipe serves 6 to 8.
