Cook Time: 20 minutes
Ingredients:
- 2 tablespoons butter
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped green pepper
- 1 clove garlic, minced
- 1 large can (28 ounces) stewed tomatoes, drained and chopped
- 2 cups fresh or frozen green beans
- 1/4 cup chopped parsley
Preparation:
Melt butter in a skillet; add onion, celery and green pepper. Sauté for about 3 minutes; add garlic, tomatoes, beans and parsley. Cover and cook for about 15 minutes, or until beans are tender. Season with salt and pepper to taste.Serves 4.
