Ingredients:
- 1/2 to 1 pound lean ground beef
- 1 cup onion, chopped
- 1 cup chopped celery
- 1 cup green pepper, cubed
- 3 1/2 cups tomatoes, diced
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp paprika
- 1 cup frozen peas
- 2 small carrots, diced
- 1 cup uncooked rice
- 1 1/2 cups water
Preparation:
In a skillet, brown the ground beef; drain off the excess fat. Add remaining ingredients and stir. Cover and bring mixture to a boil. Reduce heat to low; simmer for 35 to 40 minutes.Beef skillet with rice serves 4 to 6.
