Rhubarb Pie Recipe

This rhubarb pie is an old fashioned rhubarb pie with sugar, eggs, and nutmeg.

Ingredients:

  • 2 eggs, well beaten
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 4 cups chopped rhubarb
  • 9-inch pie shell, unbaked

Preparation:

In a large mixing bowl, mix eggs, sugar, flour, salt, and nutmeg. Beat until light and fluffy. Stir in rhubarb. Pour into unbaked pie shell. Bake at 450° for 10 minutes; reduce heat to 350° and bake 40 to 50 minutes longer.
