Chile Cheese Quiche

Quiche recipe with tomato, eggs, mayonnaise, Monterey Jack cheese, onion, and jalapeno peppers.

Ingredients:

  • 1 9-inch pie shell, in pan or homemade
  • 3 large eggs
  • 1 cup milk
  • 1 cup of mayonnaise
  • 2 1/2 cups Monterey Jack Cheese
  • 1 small can chopped green chiles
  • salt
  • 1 cup peeled diced potato
  • 1/3 cups green onion
  • 2 tab olive oil
  • .
  • Salsa
  • 2 cups diced fresh tomato
  • 1/4 cup green pepper
  • 2 jalapenos peppers minced
  • 1/4 cup sliced green onion
  • Fresh chopped cilantro

Preparation:

Fit pie crust into 9-inch pie plate and prick in several places with a fork.

Bake crust at 400° for 5 minutes. Whisk together eggs, milk, mayonnaise then stir in Cheese, green chiles, salt and pepper. Set aside.

Saute potato and 1/3 cup of green onions in skillet in hot oil, until tender and browned.

Spoon potato mixture into crust, then pour egg mixture over potato. Bake at 350° for 40 minutes, or until set.

For salsa, combine tomato, chopped green pepper, minced jalapeno and sliced green onions. If desired, add a little fresh chopped cilantro. Serve salsa cold with room temperature quiche.
