Ingredients:
- 32 marshmallows (regular size, not mini)
- 1 cup milk
- 1 cup whipping cream, whipped
- few drops green food coloring
- 1/2 teaspoon peppermint extract
- 1/2 cup sliced green maraschino cherries
- 2 cups chocolate wafer cookie crumbs
- 1 stick (4 ounces) butter, melted
- 1/3 cup confectioners' sugar
- whipped cream for topping, optional
- sliced cherries for topping, optional
- sweet or semisweet chocolate curls, optional
Preparation:
In the top of a double boiler over simmering water, melt marshmallows in milk. Cool. Fold in whipped cream then tint with food coloring and flavor with the peppermint extract. Fold in the sliced green cherries. Combine cookie crumbs with butter and confectioners' sugar. Press crumb mixture into a 10-inch pie plate. Pile marshmallow mixture into the crust. Garnish with more whipped cream, chocolate curls, and additional maraschino cherries, if desired. Freeze chocolate mint pie.Serves 8.
