Ingredients:
- 2 cups strong black coffee
- 2 cups sugar, divided
- 2 tablespoons unsweetened cocoa
- 1 cup raisins, chopped
- 1/2 cup shortening
- 1/2 teaspoon vanilla
- 2 eggs
- 2 cups sifted all-purpose flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon ground cloves
Preparation:
Preheat oven to 350°. Combine coffee, 1 cup of the sugar, cocoa, and raisins in saucepan; bring to a boil, reduce heat, and simmer for 10 to 15 minutes. Cool.Cream shortening with remaining 1/2 cup sugar until light and fluffy. Add vanilla. Add eggs, one at a time, beating well after each addition. Combine flour, salt, baking powder, soda, and spices; add alternately to creamed mixture with the coffee mixture. Bake in a greased and floured 13x9x2-inch baking pan for 55 to 60 minutes, or until cake tests done.
