Ginger Raisin Bars

Raisin bars with whole bran cereal and cinnamon and ginger.

Cook Time: 30 minutes

Ingredients:

  • 1/4 cup shortening
  • 1/3 cup sugar
  • 1 egg
  • 1/2 cup molasses
  • 1/2 cup cold black coffee
  • 1/2 cup whole bran cereal
  • 1 1/2 cups sifted flour (sift before measuring)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • dash ground cloves
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Preparation:

Cream shortening and sugar; add egg and beat well. Stir in molasses, coffee, and cereal. Sift together dry ingredients and blend into the batter. Fold in raisins and chopped walnuts. Spread batter in a greased and floured 13x9x2-inch baking pan. Bake at 350° for 25 to 30 minutes. Cool, sprinkle with sifted confectioners' sugar, then cut into bars.
Makes about 30 ginger raisin bars.
