Ingredients:
- 1/2 c. milk
- 1 c. heavy cream, divided
- 2 tsp. butter
- 1/2 tsp. instant coffee
- 2 eggs
- 6 oz. chocolate chips
- 2 tsp. rum, cognac or brandy, or use 1 teaspoon
- vanilla extract
- 1 tsp. powdered sugar
Preparation:
Heat 1/2 cup milk and 1/2 cup cream until it bubbles. Do not boil or scorch. Remove from heat. In blender mix butter, eggs, coffee, chocolate chips, and liquor until creamy. On low speed drizzle in the very hot milk. Blend until smooth, about 1 minute. Put in serving dishes and refrigerate. Beat remaining heavy cream with the powdered sugar. Serve on top of the mousse, along with chocolate shavings, if desired.Serves 4.
