Ingredients:
- 1/4 cup chopped onion
- 2 tablespoons butter
- 2 tablespoons flour
- 1/8 teaspoon pepper
- 1 1/2 cups milk
- 1 cup shredded sharp Cheddar cheese
- 6 hard cooked eggs, sliced
- 1 1/2 cups crushed potato chips
- 1 to 12 slices bacon, cooked, drained, crumbled
Preparation:
In a large skillet in butter, cooke onion until tender, but do not brown. Blend in flour and pepper until smooth. Gradually stir in milk. Cook, stirring, until mixture thickens and bubbles. Add cheese and stir until melted. Remove from heat. In a lightly buttered 10x8x1 1/2-inch baking dish, arrange a layer of egg slices. Top with half of the cheese sauce, half of the potato chips and half of the bacon. Repeat layers. Bake at 350° for 15 to 20 minutes, or until thoroughly heated.Serves 4.
