St Basil Cake Recipe

This traditional Greek cake is served on New Year's Eve. Whoever gets the piece with the coin is believed to have good luck in the new year.

Ingredients:

  • 10 Eggs, separated
  • 8 ounces butter (1 cup)
  • 3 cups sugar
  • zest and juice of 3 oranges
  • zest and juice of 1 lemon
  • 1/4 cup Brandy
  • 1 1/2 tablespoons vanilla extract
  • 6 1/2 cups self-rising flour
  • 1/2 cup sesame seeds
  • 1 coin, wrapped in foil (to adhere to tradition)

Preparation:

In a large mixing bowl, beat egg whites until stiff peaks form. In another bowl, cream the butter, sugar, and egg yolks. Fold creamed mixture into the egg whites. Add the lemon and orange zest and juice. Add the Brandy and vanilla extract. Sift the self-rising flour; add to the batter. Add the coin to batter. Grease and flour a round cake pan. Spoon batter into prepared pan; sprinkle with sesame seeds. Bake at 350 for about 55 to 60 minutes, or until firm in the middle.
